Bread with Lentiscus Berries and Commandaria

Ingredients

  • 750 gr strong bread flour 
  • 250 gr whole wheat flour
  • 500 ml lukewarm water 
  • 125 ml Commandaria wine lukewarm
  • 2 x 7g sachets dried yeast 
  • 1 tsp sugar 
  • 2 tsp fine sea salt 
  • 2 tbsp of  dried lentiscus berries
  • flour, for dusting 
  • ˝ teaspoon mastic grounded

 

Intsructions

Boil the lentiscus black berries in the water, drain them and keep the water. Let it cool down a bit (36 degrees C). Put all ingredients in a mixing bowl except the berries. Knead in mixer with dough hook for 5 - 8 minutes and at the end add the berries. Shape in loafs and bake in 190 degrees C for almost an hour.
