Dough for Olive and Halloumi Pie





Ingredients

  • 750 ml lukewarm water
  • 11 gr dry yeast
  • 1250 gr wheat flour
  • 20 gr salt
  • 6 gr granulated sugar
  • Olive oil for greasing the pie pan
  • Dried herbs and spices (dried mint, oregano, pepper or cinnamon)

 

Instructions

  1. Proof the yeast and sugar in water. Stir for a few seconds and let it sit for 2 – 3 minutes
  2. Place the proofed yeast and the rest of the ingredients in  the mixing bowl. Use the  dough hook and turn the mixer onto setting 1 (low speed) and kneed for eight minutes
  3. Let the dough to rise until double in size
  4. Coat the pie pan with oil, shape the dough and put it in the pan
  5. Let it rise for  another 1 to 2 hours in medium temperature or 40 minutes in a proofer
  6. Put the filling on top
  7. Bake in 220 degrees C for almost an hour
