(Sweet Summer Special)
An authentic cypriot, non dairy and light dessert served especially during our hot summers. Mahalebi is a popular dish of the Middle East, made occasionally with the addition of milk. Cyprus’ traditional recipe is made exclusively with corn starch (called nishasto), water and rosewater.
The dessert looks like a thick white custard and is served with rose cordial and water. It can also be served with a scoop of rose sorbet. If you are passing by a local coffee shop (kafenio), ask for mahalebi and a cup of Cyprus coffee – a summer special authentic combination.
Mahalebi is one of the easiest Cypriot traditional sweets to prepare at home, reminiscent of the aromatic pink rose that blooms during springtime in Cyprus.
