Have you ever considered the etymology of the word breakfast? Breakfast is the "break" of the "fast", the first meal taken after a long nightís fast. Breakfast is therefore a festive occasion and a meal that fuels the body and awakens the senses. Traditional fasting is usually followed by feasting and celebration among family and friends.

So what else would make a better welcome to "Akamantis restaurant" than a glass of a thirst-quenching sparkling white wine or a refreshing fresh seasonal fruit juice? Such a hearty welcome predisposes the guests to what will follow. The bounteous specialitiesí served at the hotel's distinctive Cyprus breakfast buffet are the artistic creations that come out of the chefís epicurean palette, celebrated with the natural savory flavours, aromas and colours of Cyprus; combined to delight the eyes, to tickle the palate and warm the heart. †††

Fresh rosemary infused honey, homemade jams, home-grown herbs, freshly baked pastries and breads; the traditional "eliopita" (olive bread) and "tiropita" (cheese puff-pastry), "tahinopita" (a kind of lenten pie laden with sesame seed paste mixture with sugar and cinnamon) and traditional Cyprus bread are just part of the Cyprus corner. Cyprus traditional cold cuts are also in abundance at this buffet; "hiromeri" (smoked leg of pork cured in red wine) and "lountza" (smoked pork tenderloin marinated in red wine). Halloumi, the flagship of Cyprusí gastronomy, and aged "kefalotyri" cheese, olives, homemade "taramosalata" (fish roe salad) and homemade fruit preserves make up the rest of the Cyprus buffet.†For the guests with a sweet tooth, the hotelís chefs make their "pièce de résistance"; the traditional "pastelaki" made from natural carob syrup.

The warm selections include cooked-to-order omelettes with a Cyprus character enriched with the traditional island recipes, use of local aromatic herbs, local meats and halloumi. It is impressive how a single meal could demonstrate such an incredible dietary diversity with authentic flavours and high nutritional value.
